The hardest on to locate is on Chinatown 2, and here is a tip : It is under a movable box near a thorn.
I finally found the last unlock. It is one that once you pass it, you can't go back to get it. It was under a box on a roof.
A good way to describe the 3rd unlockable for Chinatown 2 is about midway through the level, you will see an area with two of those green one eyed enemies that spit out eyeballs at you. One of them is on a ledge that sits above a box, and there are thorns to the left of the box. With that camera angle though, there's nothing you can do with the box, since the thorns would kill you if you attempted to go there and grab it.
Instead, if you proceed just enough past the 2nd eyeball enemy, the camera shifts. If you double jump up backwards to where you just were, you'll see the new camera angle allows you to get to the box and pull it from a place where there is no thorn (the thorn is now vertical, on the left of the box, and the ground connected to the box on the right is just a regular ledge). When you pull the box away, you'll receive a paint ammo upgrade.
